Balsamic Roasted Cherry & Greek Yogurt Parfait

you may have noticed an increase in parfait consumption on the blog lately.
my stomach is thankful for this.
granola.
creamy yogurt.
sweetened fruit.
what more does a girl need?
...maybe shoes, a great pair of jeans and a nice set of pearls, but for now i'll just settle for a parfait.

Balsamic Roasted Cherry & Greek Yogurt Parfait


Ingredients:
1 cup cherries, pitted (fresh or frozen & thawed)
1 tsp balsamic vinegar
1 tsp sugar
2/3 cup Greek yogurt (plain or vanilla)
1/4 cup granola (homemade or store bought)

Method:
Preheat oven to 450F.
In small bowl mix together vinegar and sugar.  Add in cherries tossing to coat.
Place cherries on foil lined baking sheet bake for 15-20 minutes.
Remove from oven and allow to cool for 5-10 minutes before assembling parfaits.
To assemble parfaits:  Spoon yogurt into bottom of a glass or mason jar, spoon cooled cherries over and top with granola.
