Pumpkin Mashed Potatoes
Mashed potatoes remind me of fall. They are comfort food at it's finest, and the primary reason the autumn/winter months require oversized sweaters. In our home we really don't eat mashed potatoes during the months May-September, however, with Thanksgiving just a couple weekends away, I thought it appropriate to "mash away." Also, what's more Thanksgiving than pumpkin.
Remember yesterday was I was boasting about how I wasn't making anything with pumpkin, short lived, I know. #pumpkinobsessed
Ingredients:
3-4 (2 lbs) russet potatoes, peeled and chopped
1 cup pumpkin puree
1/4-1/2 cup milk
1 Tbsp butter
1/4 tsp sage
salt & pepper to taste
Method:
In large pot of water, bring potatoes to a bowl and cook till tender, approximately 20 minutes.
Using hand blender whip potatoes with butter and pumpkin. Add in milk 1/4 cup at a time, adding more if necessary. Add in sage and season to taste with salt and pepper.
Serves: 6
