Homemade Apple Butter
This may come as a surprise to you all, but today's post doesn't feature pumpkin. Crazy right? My last 3 out of 5 posts (waffles, cookies, muffins) did, so I thought I'd take a small detour to my other favourite fall food. Apples.
Apple and pumpkin butters are some of my favourite fall condiments. They are the perfect addition to a bowl of warm oatmeal, a spread for muffins and toast, stirred in with yogurt and topped with granola, oh and of course,...pancakes and waffles. Not to mention your house will smell delicious and completely fall-like.

Apple Butter
Ingredients:
5lb assorted apples (I used honeycrisp and gala), peeled and sliced thin
1 cup brown sugar, packed
1/4 tsp sea salt
1 tsp cinnamon
1 tsp vanilla
pinch of nutmeg
pinch of cloves
Method:
In a slow cooker set to high, place apples, sugar and salt. Mix together and cook, covered for 4 hours.
Remove apple mixture and transfer to a food processor (in batches,) whirling till smooth and creamy. Add in spices and vanilla.
Return pureed apples back to slow cooker. Cook uncovered on low heat for another 3.5 - 4 hours till thick and dark in colour.
Yields: approximately 2 cups
