Reverse BLTs w/ Avocado


everyone loves a good BLT sandwich.
warm toasty bread.
sizzling bacon.
crisp lettuce & tomato.
creamy mayonnaise.
pretty much handheld perfection.

it also happened to be last nights dinner alongside a perfect bowl of tomato & red pepper soup.



best part, leftover bacon.
which translates into today's light & healthy lunch.
a reverse BLT.

BLT in lettuce wrap form with crunchy croutons as a topping.



one iconic sandwich.
two ways.
multiple enjoyment.

Reverse BLTs w/ Avocado

ingredients:
iceberg lettuce
bacon strips, cooked
cherry tomatoes, halved
avocado, pitted and sliced
mayonnaise
croutons

method:

layer tomatoes on top of lettuce leaves top with bacon, drizzle with mayonnaise, layer on 2 - 3 avocado slices and finish with a few croutons.  enjoy.
