Strawberry Chia Jam
we have a pretty good jam collection going on at home at the moment.
apricot, cherry, peach, strawberry-rhubarb. and while all are each delicious & farmers market/supermarket purchased, there is something extra special about homemade jam.
i'm not sure if it's because it reminds me of my childhood, or because i immediately think of my grandma, but it just puts a giant smile on my face when i think about it.
channelling my nostalgic tuesday self, i decided a strawberry jam making afternoon was in order. obviously with a healthy boost of omega 3's for good measure.
enter chia seeds.
chia seeds are nothing new to this blog, my countless chia pudding recipes are a testament as to how much i adore this superfood.
and now i have yet another way to enjoy them...
with a side of tea & crumpets.

Strawberry Chia Jam
ingredients:2 cups strawberries, chopped
3 tablespoons maple syrup
2 tablespoons chia seeds
method:
place strawberries and maple syrup in a medium saucepan over medium-high heat. slowly bring to a boil and cook at a low boil for 10 minutes.
add in chia seeds and cook for 5 minutes longer. remove from heat and allow mixture to cool completely, about 1 hour {jam will thicken upon standing}
store in a mason jar in the fridge.
