pulled pork tostadas


when faced with post Super Bowl pulled pork leftovers, the ideal thing is to make is tostadas.

pulled pork
corn tortillas
avocado
refried beans
greek yogurt
salsa
now that's how every tuesday should end and the whole reason i always make too much food.  happy fat tuesday!

pulled pork tostadas

ingredients:
6 small corn tortillas
4 cups pulled pork
1 16oz can refried beans
1 avocado
1/2 cup plain greek yogurt
1 cup salsa
fresh cilantro, rough chop


method:

in a small bowl, heat beans in microwave until warmed through.  set aside.
in a non-stick skillet pour in oil (approx 1/4- inch) and fry one tortilla at a time, flipping once till golden brown and crispy.  remove from pan and transfer to a cooling rack, blot off excess oil. repeat with remaining tortillas.
to assemble:  spread each tortilla with refried beans, then add pulled pork, avocado, yogurt, salsa & cilantro.
