avocado & shrimp boats


today's lunch is brought to you buy random stuff i have in my fridge.


turns out random stuff makes for pretty good lunches.

also turns out that this lunch is will now be consumed everyday for the remainder of time.  #fact



avocado & shrimp boats

ingredients:
1 avocado, ripe
6-7 frozen cooked shrimp, thawed and tails removed
6 grape tomatoes, halved
scallions, chopped fine
cilantro, chopped fine
olive oil
lemon juice
sea salt & pepper

method:
halve avocado lengthwise and remove pit.
carve out avocado flesh and cut into large chunks.  
in small bowl combine avocado, shrimp, tomatoes, scallions, cilantro.  drizzle with olive oil and a squeeze of lemon juice.  season to taste with salt and pepper.
scoop mixture into back into remaining avocado skins.  serve.
