spring mix & two berry salad

good morning.


happy easter monday.  
or to me, the day after i've indulged too heavily in brunch, chocolate, dinner, chocolate, wine, cake, and yes more chocolate.

luckily i was in charge of bringing a salad to our big family gathering so at least i ended up getting in some greens yesterday.  mind you they were swallowed down with some sweet & spicy candied pecans and goat cheese, but they were greens nonetheless.


yesterday's salad was a colorful blend of spring mix greens w/ blackberries and blueberries hidden throughout.
and of course you need to round out any salad with a healthy dose of cheese and nuts.


delicious, heavenly and easy on the eyes.



spring mix & two berry salad

ingredients:
spring mix
fresh blueberries
fresh blackberries
goat cheese
sweet & spicy pecans  {click here for recipe}
vinaigrette {recipe follows}

method:
no rules here.
add greens to a bowl, add vinaigrette and mix together.
top with berries, cheese, and nuts (go heavy on these, they're the best part afterall)



vinaigrette:

1/2 cup extra virgin olive oil
2 tablespoons balsamic vinegar
2 tablespoons organic honey
1 tsp whole grain dijon mustard
pinch of sea salt

in small bowl, whisk together vinegar with honey, dijon, and salt.  slowly whisk in oil until well combined.
