crab, corn and avocado with goji berry & pistachio crisps
in keeping with the theme of holiday entertaining, i'm bringing you another crowd pleasing appetizer courtesy of kii naturals and their artisanal crisps.
these delicious crisps come in a variety of flavours and are an entertaining staple for me. whether dressed up, or served alone, they are the perfect party food.
and, because we are in the prime holiday entertaining season, these crisps are getting some extra special treatment thanks to the dynamic duo of crab and avocado.
move over cookies, santa's getting appetizers this year.
crab, corn and avocado w/ goji berry & pistachio crisps
1 box (150g/5/3 oz) kii naturals goji berry & pistachio crisps
1/2 cup cooked crabmeat
1/3 cup corn kernels
1/4 cups finely diced red pepper
2 tablespoons finely diced red onion
2 tablespoons light mayonnaise
1 tablespoon lime juice
1/2 teaspoon finely grated lime zest
1/2 teaspoon sriracha
1/4 teaspoon salt
pinch ground cumin
1/2 avocado, died
place crabmeat in sieve; pick through and remove any shells or cartilage. press to remove any excess water. transfer to a bowl.
add corn, red pepper, red onion, mayonnaise, lime juice, lime zest, sriracha, salt and cumin. stir to combine.
stir in avocado just before serving.
top each crisp with heaping teaspoon of crab mixture
top each crisp with cilantro
yields: 30 crisps
