Two Ingredient Pancakes & Superbowl Sunday

Today is bound to get out of control.
It's Superbowl Sunday which is pretty much like an all access pass to the food and drink smorgasbord of life.  Last year we decided on a Mexican theme fiesta, and this year we are sticking to some tried and true appetizer favourites; baked avocado fries, pickle chipscaprese bites, and caramel twix popcorn to name a few.  The only thing missing is a 49'ers victory....

Football aside, Sundays also mean pancakes, a weekend staple in their own regard.  Chances are if you are a pancake fanatic like myself you know of every way imaginable to eat these flapjacks.  Savoury, sweet (with chocolate bars), muffin-like, as birthday cake, or by far the easiest yet...with 2 ingredients.  Yes, you read that right.  You are only two ingredients away from being united with one of breakfasts most favourite item.

Ingredient #1 - Banana
Ingredient #2 - Eggs

No flour, no sugar, no milk, no excuses.  Eat the whole batch, I did.





Disclaimer:  the consistency of these pancakes are different from actual pancakes, but they still hit the spot and are more than healthy.  enjoy.



Two Ingredient Pancakes

Ingredients:
1 large banana, mashed
2 eggs, lightly beaten
dash of cinnamon (optional)
splash of vanilla (optional)

maple syrup for serving

Method:
Heat non-stick skillet over medium-low heat.
In small bowl combine mashed banana and eggs.  Stir in cinnamon and vanilla if using.  Pour batter by 1/3 cupfuls onto lightly greased skillet, and cook till golden, approximately 1 minute.  Flip, and cook for a little longer.

Serve with maple syrup.
Yields 3 pancakes
