Grilled Caramelized Onion & Gorgonzola Pizza


Pizza toppings in my opinion should be simple and kept to a handful at most.  If you choose the right ingredients you can achieve a dynamic pizza that is flavourful without a lot of fuss.

Case in point, dinner tonight.  Grilled Caramelized Onion & Gorgonzola Pizza.  Mmmm....excuse me while I wipe the remaining crumbs from my chin....


 My husband in all honesty is afraid of blue cheeses, he grimaces at the thought of what the colour 'blue' actually is.  Me?  I'm a cheese fan.  Any kind, bring it.  I think cheese (just like wine) should be it's own food group.  I was craving blue cheese today and I knew I needed to incorporate it in a way that would appeal to the masses.  Pizza it is.  Throw in some slow cooked onions, pine nuts and rosemary; fire up the grill, and there you have it, pizza success.

(side bar:  I was hoping using Gorgonzola cheese meant there would be leftovers (for me,) but sadly, every last piece/crumb/morsel was eaten.  Guess I'll be making this one again.)


Grilled Caramelized Onion & Gorgonzola Pizza

Ingredients:
pizza dough (homemade or store bought)
3 large Vidalia onions, sliced thin
3 Tbsp olive oil, divided
1 Tbsp butter
2 tsp sugar
4oz Gorgonzola, crumbled
2 Tbsp pine nuts
2 Tbsp fresh rosemary, chopped
sea salt & pepper

Method:
Heat large skillet over medium-high heat.  Add 1 tablespoon each of oil and butter.  Add in onions and 1/4 tsp each of salt and pepper.  Cook stirring constantly until onions begin to soften, 5-7 minutes.
Reduce heat to medium-low, add sugar and cook for approximately 20 minutes, until onions are golden brown in colour.  Occasionally stirring.
Meanwhile, prepare grill/BBQ to medium heat.
Stretch pizza dough to 12 x 10-inch rectangle on baking sheet.  Brush with 1 tablespoon oil.  Place on grill over direct heat, oil side down.  Brush top with remaining tablespoon of oil.  Grill covered for 2 minutes, or until underside is golden.
Flip dough, sprinkle evenly with onions, cheese, nuts, and rosemary.  Cover and grill till underside is golden, approximately 2 minutes.  Move pizza to indirect heat, cover and cook for 5 minutes, or until cheese is melted.
Transfer to cutting board.  Slice.
