Roast 'em Beets

Root vegetables are a family favourite around here.  They are easy to prepare, extremely versatile, and they just plain taste great.  It's a trifecta!
My favourite of the root vegetables, is the beet, hands down.  I'm hooked on the sweetness, and I adore the colour.  Eating should always be this pretty.

I had some leftover Gorgonzola from our pizza night on Saturday, so I decided to put it to good use and sprinkle it over some oven roasted beets.  The result?  A delicious flavour one-two punch, in your mouth.  Mmmm.

Roasted Beets w/ Gorgonzola & Pine Nuts


Ingredients:

4 medium beets, whole, skins on & stems/leaves removed
2-3 Tbsp Gorgonzola, crumbled
1 Tbsp pine nuts
olive oil
sea salt & pepper


Method:

Preheat oven to 425F.
Place beets on large piece of tin foil, drizzle with oil.  Wrap up and roast for 45-60 minutes until tender.
Remove from oven.  Allow to cool slightly before removing skins.
Slice into rounds.  Top with cheese, pine nuts, drizzle of oil and salt & pepper to taste.

Serves 4.
