blueberry-raspberry crumb bars

sometimes when you buy too many blueberries, you just need to make a dessert to help you get through the week.  we are currently in a heat advisory.  luckily we have air conditioning so turning on the oven doesn't bother me much.  also, eating this dessert on the deck with a big scoop of ice cream is just another way to cool off!

blueberry-raspberry crumb bars

ingredients:

crumb topping
3 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1 cup unsalted butter, cut into tablespoons
1 egg
1 tablespoon of water
1/2 teaspoon salt
1/2 teaspoon vanilla

fruit mixture
2 cups blueberries
2 cups raspberries
1/2 cup sugar
3 tablespoons lemon juice
4 teaspoons cornstarch

method:
preheat oven to 375F.  spray 9 x 13-inch pan with non-stick spray.  set aside.
to make crumb base: whisk together flour, sugar, baking powder and salt.  add butter and process till mixture becomes crumbled.  add in egg, water, and vanilla process further, mixture will still be crumbled.
to make fruit layer:  mix together berries with sugar, lemon juice and cornstarch.
to assemble:  pat 2/3 of crumble mixture in bottom of the prepared pan and flatten out.  layer in fruit and spread out evenly.  top with remaining crumb topping.
bake for 45 minutes.  remove from oven and allow to cool before cutting into bars.
