Strawberry Margarita Jell-O Shots
ingredients:
24-30 large strawberries
1 box strawberry jell-O
1 cup tequila
3/4 cup cointreau
2 limes
sugar
method:
to prep berries:
cut off top of each strawberry at its widest point.
cut off the bottom tip to allow the berry to stand upright.
using a melon baller or small spoon scoop out the inside and place upright on a baking sheet.
to make jell-o:
combine jell-o mix with 3/4 cup boiling water and stir for 2 minutes to completely dissolve. add in the tequila and cointreau.
using a container with a spout, pour jell-o/booze mixture into the strawberries. fill them up to the top to allow for shrinkage once the jell-o becomes solid.
refrigerate for four hours or until firm.
to finish:
zest 1 lime onto a plate of sugar.
cut up remaining lime into thin rounds, then cut into small wedges. place a slit into each wedge so they balance on the tip of the strawberry.
wet the sides of the solidified jell-o shot with lime or water, roll in the sugar & lime zest mixture, and garnish with lime wedge.
enjoy.
