3rd Annual Cookie Exchange | Oreo Cheesecake Truffles


Las night marked our third annual Christmas cookie exchange. Each December the girls and I get together for a good 'ol fashion cookie swap, share in some Christmas cheer and enjoy each others company.

14 girls x 6 cookies/girl = Cookie Coma

What will the fate of 80+ cookies be?

If you ask J.  They are now his property.

If you ask the kids.  They want to ship them to Santa.  Their logic is simple.  Cookies = presents.  Lots of cookies = lots of presents.

I guess only time will tell what comes of these delicious treats....for now, it's cookies for breakfast.

This year I decided to go a different route and opt to make truffles instead of cookies.  Oreo Cheesecake Truffles to be exact.  My reasoning was simple; no bake, 3 ingredients, sinfully delicious.  Triple win.

Merry Christmas Friends!   2012 was a great year and I can't wait to see what 2013 holds for all of us.  I'm certain of one thing though, there will be cookies involved....

Oreo Cheesecake Truffles

Ingredients:
36 Oreo cookies
6oz cream cheese, softened
12oz white chocolate or vanilla candy melts

cookie crumbs for garnish

Method:
Place cookies in food processor and whirl until mixture becomes fine crumbs.  Add in softened cream cheese and mix to combine.
Roll mixture into balls and place on parchment lined baking sheet.  Transfer to freezer until firm, approximately 15 minutes.
Meanwhile, melt chocolate or candy melts in microwave according to package directions.
Dip balls into melted chocolate and sprinkle with reserved cookie crumbs.
Let set, refrigerate and enjoy.

Yields 36-48 truffles
Store in air tight container in fridge.
