christmas brittle



What do you get when you mix soda crackers, sugar and chocolate?  Awesomeness, sheer awesomeness!
No Christmas is complete without Breton Brittle.  Well except that I seem to be out of Breton crackers at the moment.  Never fear, I called in the soda crackers for this job.  Delicious.  Although, 'Soda Brittle' doesn't quite have the same ring to it, so we'll just call this Christmas Brittle.  I'm fairly certain the ladies at my mom's office are going to enjoy this treat.  Who wouldn't?  Merry Christmas to them.

Christmas Brittle


Ingredients:
1 sleeve (approx 40) soda crackers, unsalted
1 cup brown sugar
1 cup butter
300g semi-sweet chocolate chips
2/3 cup walnuts, chopped

Method:
Preheat oven 400F. 
Line 13 x 9 cookie sheet with foil.  Arrange crackers in a single layer, breaking to fit where necessary.  Set aside.
In saucepan over medium heat, melt butter and sugar.  Stir and cook until mixture reaches a boil.  Remove from heat and pour over crackers.
Bake for 5 minutes.  Remove from oven and sprinkle with chocolate chips.  Allow chips to soften for 2-3 minutes and spread evenly with spatula.  Top with nuts.
Transfer baking sheet to refrigerator to cool, approximately 1 hour.  Break into pieces.
Store in air tight container.
