brown sugar grilled trout
grilled fish is a springtime/summertime/anytime favourite in our household. whether it's salmon, tilapia, trout; grilled straight up served topped with salsa, or in a taco, we just can't seem to get enough. thankfully it's a healthy option any way you serve it, which leaves room for a nice glass of riesling or rose which is obviously a necessity when one grills in the early evening sunshine.
brown sugar grilled trout
ingredients:
2 lbs fresh trout, cut into individual servings
4 cloves garlic, minced
3 tablespoons olive oil
3 teaspoons brown sugar
1 teaspoon dried chives
salt & pepper
method:
whisk together garlic, oil, sugar, chives, and salt &pepper. pour over fish and allow to marinate for 2 hours.
preheat BBQ to medium-high.
oil grill. lay fish skin side down. cook with lid closed for 5-7 minutes (or half cooked) then flip, leaving skin on grill. cook for an additional 5 minutes or until cooked through.
serve. enjoy.
