easy scrambled egg tacos
the best part about having tacos for dinner the night before, is that when you don't use all the tortillas (shocking, i know), then you can absolutely start your day off with a scrambled egg breakfast taco version.
and i can think of no better to start to a thursday.
i adore breakfast tacos, aside from being super versatile, you can put anything in them...black beans, roasted chicken, avocado....everything goes with eggs, they always end up delicious.
tacos for president & prime minister. (it would make for a better alternative than current day)
scrambled egg tacos
ingredients:4 large eggs
1 tablespoon milk
salt & pepper to taste
1 tablespoon butter
2/3 cups grated cheddar cheese, divided
2 tablespoons salsa
2 green onions, chopped
1 tomato, chopped
flour tortillas for serving
method:whisk eggs, milk, 1/3 cup of cheese, salt & pepper in small bowl. set aside.
melt butter in skillet over medium heat, add egg mixture and cook stirring gently. add in salsa, continue to cook until set but soft. remove from heat.
spoon eggs into flour tortillas. top with remaining cheese, green onions and fresh tomatoes.
