Endive Bites w/ Goat Cheese, Mandarin Oranges, Balsamic Vinegar & Black Pepper
With our annual Christmas Eve party a mere week away, I was looking to try out some healthier appetizers in order to balance out the number of nanimo bars and charcuterie plates that were bound to be consumed (if only by me.)
Obviously football Sunday (aka my favourite day of the week) was a perfect opportunity, since let's face it, our household spends the day snacking, watching the game, and lounging about.
After assessing the current fridge situation, I settled upon Endive Boats w/ Goat Cheese, Mandarin Oranges, Balsamic Vinegar and Black Pepper. Easy to prepare, fun to eat, healthy, colourful, and perfect for our soon to host party.
Ingredients:
2 heads Belgium endive
1/2 - 3/4 cup goat cheese, crumbled
2-3 Mandarin Oranges, peeled and segmented
balsamic vinegar
black pepper
Method:
Trim the bottoms of the endive heads, and separate the leaves, removing any inner leaves which may be too small.
To assemble: Place crumbled goat cheese on each leaf, top with 2 segments of orange, a splash of balsamic and a sprinkle of pepper.
