scrambled eggs w/ smoked salmon & goat cheese



who do I talk to about making breakfast acceptable for all meals all the time?
i mean who doesn't love eggs.  they're an absolute favourite of mine. 
poached, scrambled, fried, hard boiled i'll take them all. 
another favourite?  smoked salmon.
if the two of us have ever gone to brunch together, then you already know that if smoked salmon is on the menu, it's soon to follow by taking position on my plate.  it's my go to as it pairs exceptionally well with the aforementioned favourite eggs. 
my favourite way to eat the two is in a quiche.  it's just so elegant and fancy.  and we all know that i'm neither of those things but at least my breakfast can be.

wanting to stick with the 'i'm so fancy' appeal, i decided to take a simpler approach and jazz up my favourite scrambled eggs by folding in smoked salmon and goat cheese.
so simple.  so easy.  so scrumptious. i think i'll have this again for lunch!

scrambled eggs w/ smoked salmon & goat cheese


ingredients:
4 eggs
4 slices smoked salmon, chopped
1 tablespoon milk
1/4 cup goat cheese, crumbled
scallions {green tops only}, chopped
sea salt & pepper to taste
butter for pan


method:
in a bowl whisk together the eggs & milk.  season to taste.
melt butter in pan over medium-low heat.  add scallions and cook, stirring until softened, approximately 30 seconds.  add the eggs and cook until they just begin to set, about 10 seconds; stir in salmon.  cook, stirring gently.  remove from heat fold in crumbled goat cheese.  adjust seasonings accordingly.
top with additional scallions & goat cheese if desired.
