slow cooker mashed potatoes
slow cookers have got too be one of the greatest things ever invented.
i mean, the fact that you can make dinner, while you're eating brunch at a restaurant with your three favourite people, celebrating the last day of summer vacation has got to be note worthy. right?
mr handsome and i left the dinner or "last supper" menu up to the kiddos, which meant it was a BBQ chicken and mashed potato monday night. also known as the best kind of monday night. especially since the potatoes made themselves. i heart slow cookers.
slow cooker mashed potatoes
ingredients:
2 lbs baby red & yellow potatoes
2 cloves garlic, minced
1/2 cup sour cream
1/4 cup milk
2 tablespoons fresh parsley
1 tablespoon fresh oregano
3 tablespoons butter
salt & pepper to taste
method:
cook potatoes in slow cooker on high for 2-3 hours or low for 5-6.
once potatoes are cooked and fork tender add in the remaining ingredients and mashed.
serve.
