Baked Pickle Chips

And so it begins....

...football season is officially upon us.


My husband has been reminding me of this day since last Monday.  To say he's excited is an understatement.  He is involved in two fantasy football pools, and is currently decked out in a Buffalo Bills jersey, with a Buffalo Bills T-shirt underneath.  Hmmm, I wonder if he'll go as far to paint his face too?

So, to celebrate the beginning of unproductive Sundays, I'm channelling my inner 'Snooki' and making "fried" pickle chips (a healthified version.)  Mmmm...delicious.
I have to admit I love football season too, but for an entirely different reason....The food!

Fried (Baked) Pickle Chips


Ingredients:
40 dill pickle rounds
1 whole egg + 1 egg white
3 Tbsp all-purpose flour
1 tsp Sriracha sauce
1/2 tsp granulated garlic
1/2 tsp pepper
1 cup Panko breadcrumbs

ranch dressing for dipping


Method:
In small bowl whisk egg.  Add in flour and mix well.  Add in garlic, pepper and Sriracha sauce.  Combine.
Place breadcrumbs in shallow dish or pie plate.
Turn broiler on high.  Line baking sheet with tinfoil and spray with non-stick spray.  Set aside.
Using paper towel, blot pickles to remove excess juice.
Dunk pickles into egg/flour mixture, dredge through breadcrumbs, coating evenly.  Place on prepared baking sheet.  Repeat with remaining pickles.
Broil for 2 minutes watching carefully that they don't burn.  Flip and broil for another 2 minutes.

Serve w/ ranch dressing
