Strawberry Buttercream Frosting & Turning 40!
february is always a ridiculously busy month for our family. between valentines day, anniversaries, 3 birthdays, it's a lot to jam into the shortest month of the year. so.....birthday month continues...
this year is especially monumental, my mr. handsome turned forty!! i have been fortunate/lucky/blessed enough to spend the last 19 birthdays with him (also, that's a heck of a lot of cake)
so like i do for all birthdays, i take requests. mr. handsome wanted a lemon cake with strawberry frosting (i really pushed for blueberry to be completely honest, because that's just a dynamite duo). but, it's not my day so i'm happy to oblige.

Strawberry Buttercream Frostingingredients:
1 cup unsalted butter
4 1/2 cups confectioners' sugar
1 cup fresh or frozen (thawed) strawberries
1 teaspoon vanilla extract
pinch of salt
in blender add strawberries and puree until smooth.
in stand up electric mixer beat butter until light and fluffy.
add in 1 cup of sugar,2 tablespoons of strawberry puree and vanilla until just blended.
repeat with remaining sugar and 3-4 more tablespoons of puree.
if frosting is still too thick you can thin it out with a little milk.
