Oh She Glows | Vegan Chocolate Chip Cookies


While we are all trying to survive this self-isolation/quarantine portion of our lives, being away from friends and family is becoming more & more difficult with each passing day.  Does anyone else just want a hug already.

Yesterday my sweet sister dropped off a care package for us.  Books, magazines, artwork from little E and delicious home-made cookies.
But seriously, these cookies....

The recipe is courteous of Oh She Glows.  It's gluten-free, vegan, which makes devouring them A-Okay and quarantine approved.  Thanks for the thoughtful gift J.

Vegan Chocolate Chip Cookies

ingredients:
1/4 cup almond butter
1/4 coconut oil
1/2 cup brown sugar
1/4 cup coconut sugar
Flax egg (1 tbsp flaxmeal w/ 3 tbsp water)
1 tsp vanilla
1/2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/2 cup almond flour
1 cup oats
1/4 cup chocolate chips

method:Mix almond butter and coconut oil in mixer until blended. Add in both sugars and beat for one minute more. Than add in flax egg and vanilla.
One by one, beat in baking soda, powder and salt. Then almond flour, then oats.
Stir in chocolate chips.

Drop by tbsp onto lined cookie sheet, bake for 10-12 minutes at 350 depending on size.
