Oatmeal, Banana & Chocolate Chip Cookies

is anyone else glad they stocked up on flour before Christmas?  before all this chaos of toilet paper hoarding/no yeast-to-be-found started?  where are my baking essentials at?

at least we have a little to get us through for now, which is lucky because my overripe bananas will not be consumed otherwise.  

instead of going my basic banana bread route, today i opted to try something different.  

cookies!!  

let's face it we can all use a shake up right about now.  am i right?

so here it is oatmeal, banana & chocolate chip cookies.  these should at least hold the kids over till wednesday which will buy me time before i'm tasked with the next "can we bake something fun?" "i'm bored." "what's for lunch?"

oatmeal, banana & chocolate chip cookies

ingredients:
3/4 cup butter, softened
3/4 cup granulated sugar
1/4 cup brown sugar
1 egg
1 teaspoon vanilla
2 bananas, ripe & mashed
2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
1 cup old-fashioned oats
1 1/4 cup semi sweet chocolate chips

method:
preheat oven to 350F.  line baking sheet with parchment paper and set aside.
in small bowl add brown sugar to mashed bananas, stirring to incorporate.  set aside.
in a stand mixer, cream butter and granulated sugar.  add in egg and vanilla and mix till combined.  add in banana mixture and mix well.
in a separate bowl whisk together flour, cinnamon, baking soda and salt.  add to wet ingredients and combine.
fold in oatmeal and chocolate chips.
scoop cookie dough onto assembled baking sheet and bake for 11-12 minutes.  allow to cool on pan for 2 minutes before transferring to cooling rack to cool completely.
