Sous Vide Jalapeno Bourbon Glazed Ham
this year for Christmas Eve we decided to give our usual traditional lasagna supper the night off and went with a ham dinner complete with perogies and salad (for balance of course).
i'm not sure about you.... but when i think about cooking a ham i immediately gravitate towards the belief that it should be salty and sweet balanced with a little bit of heat. oh and maybe throw in a cooked out bourbon smoky flavour. just saying.
Sous Vide Jalapeño Bourbon Glazed Ham
4-5 lb boneless ham
glaze
1/2 cup fresh lime juice (4-5 limes)
2 cups orange juice
1/2 cup brown sugar
1/4 cup bourbon (makers mark)
1/4 cup maple syrup
1/4 cup apple cider vinegar
1 jalapeno, sliced lengthwise (ribs and seeds removed)
method:
in a small saucepan place all the glaze ingredients and simmer for 1.5 hours. remove the jalapeño.
preheat a water bath to 137F
score the ham and pour 1/4 cup into a sous vide bag then seal, reserving the remainder of the liquid. place bag in water bath and cook for 4 hours.
remove ham from sous vide bag and preheat oven to broil.
brush ham with glaze and broil for 3-4 minutes. repeat 4 times.
carve and enjoy.
I really appreciate you sharing that. Getting a sous vide immersion circulator has been my best purchase this year, which cooks meat incredibly juicy and tender.
