red grape & quinoa salad
dinner tonight was simple, healthy, and colourful.
mr. handsome was speaking at a function which meant the kids and i were dining solo.
salad it is.
a simple, healthy, colourful salad.
but salad isn't really a salad unless you pack it full of cheese, crunchy grapes, protein packed quinoa & toasted nuts.

Red Grape & Quinoa Salad
ingredients:
1 cup quinoa, rinsed & drained
1 1/2 cups water
2 cups red seedless grapes, halved
1/2 (5oz) bag of baby spinach
1/2 cup goat cheese crumbled
1/2 cup pecans, toasted
3 tablespoons fresh squeezed lemon juice
3 tablespoons olive oil
2 1/2 teaspoons honey
salt & pepper to taste
method:
rinse and drain quinoa in a fine sieve.
in medium saucepan bring water to a boil. add quinoa, stir and reduce heat to medium-low. cover and cook for about 12-15 minutes or until all liquid is absorbed.remove from heat and allow to cool completely.
meanwhile to make dressing, combine lemon juice, olive oil, honey and salt and pepper, whisk together. set aside.
in large bowl combine spinach, cooled quinoa and grapes and toss together with dressing. top with goat cheese and pecans.
serve.
yum! this looks so good. i haven't played with too many grains in my salads before when i make them at home. but quinoa would be a great way to add protein and carbs....and deliciousness. also, goat cheese is always a win.
