pumpkin pie breakfast parfait
this morning for breakfast i decided to jump on the pumpkin bandwagon and begin october the only way that i know how, with a giant pumpkin & greek yogurt parfait.

in reality, i think pumpkin spice lattes are overrated.
pumpkin parfaits are where it's really at.
protein and fibre packed, this is a healthy way to begin the day.

pumpkin & greek yogurt parfait
ingredients:
3/4 cup 2% vanilla greek yogurt
1/2 cup pumpkin puree
1 tablespoon pure maple syrup
1/4 teaspoon cinnamon
pinch of nutmeg & ginger
1/3 cup granola (homemade or store bought)
method:
in small bowl mix together pumpkin, syrup and spices until combined.
in small mason jar or glass, layer in greek yogurt and top with pumpkin and granola
