White Chocolate Raspberry Scones

happy saturday.

this weekend is a busy one for us.  between two soccer games, two bridal showers, out of town guests, packing to move in 3 weeks, packing for our vacation next weekend, a family walk in support of the children's hospital, it's action packed.  

writing the list has me exhausted.


before the madness ensures, i'm taking a break and enjoying a fresh, warm scone and tea.
a white chocolate and raspberry scone to be specific, and the perfect start to my day.



 it's been far too long since i've made scones, so i'm breaking that streak and downing two in the process.

White Chocolate Raspberry Scones

Ingredients:
2 cups all-purpose flour
4 tsp baking powder
1/4 tsp salt
1/3 cup sugar
6 Tbsp butter
3/4 cup buttermilk
1 egg
2/3 cup white chocolate
3/4 cup fresh or frozen raspberries**

Method:
preheat oven to 375.  line baking sheets with silpat mat or parchment paper.  set aside.
in large mixing bowl combine flour, baking powder, salt, and sugar.  cut in butter.
in separate bowl combine buttermilk and egg.  add to dry ingredients.  stir to combine.  fold in raspberries and white chocolate chips.
turn out onto lightly floured surface and knead 5 times.
pat out to form a circle 1 1/4 - inch thick, cut into 8 equal segments.
transfer to prepared baking sheets.  bake for 15 minutes or until golden in colour.
Allow to cool a little on baking rack before serving.
Serve warm.


**note - using fresh raspberries will release more juices during the kneading process and you may need to add a little more flour
