Honey & Thyme Roasted Parsnips
roasted vegetables will always hold a special place in my heart, the same place that my children, mr. handsome, and cheesecake hold.
okay, perhaps not the exact same place, but i love them regardless.
tonight, honey, thyme and parsnips took ownership of my oven and produced a more than delicious side dish that satisfied all of our palettes.
we are veggie obsessed in this house. i should probably look into opening up my own farmers market at this rate....
Honey & Thyme Roasted Parsnips
Ingredients:
2 lbs parsnips, peeled, ends trimmed, and quartered lengthwise
3 Tbsp olive oil
2 1/2 Tbsp honey
10 - 12 sprigs of thyme
sea salt & pepper
Method:
preheat oven to 400F.
in large pot of boiling water, blanch parsnips for 3 minutes. drain.
toss parsnips with olive oil and honey and place on baking sheet. place sprigs of thyme overtop and season to taste with salt & pepper. roast for 30-35 minutes till browned and tender.
remove from oven and discard thyme.
if desired drizzle with a little more honey.
serves 4-6
