4 ingredient cookies

ski weekends have officially been underway for 3 weeks now and i'm always looking for new, fun treats to pack along for the kids lunches on the slopes.  
you know the kind of fun treats, the ones that make on-lookers say 'woah, you've got a cool mom' (despite me being the most uncool human alive)

not wanting to overly complicate my life, i'm upgrading my usual 3 ingredient cookies by adding one additional ingredient....oreo cookies! 
the only thing better than a cookie, is a two cookie cookie.
so there you have it, four ingredients, two cookies, and giant smiles on the kids and husbands faces.
these will be absolutely making another appearance, now that this first batch has been devoured. 

4 ingredient oreo birthday cake cookies

ingredients:
1 box rainbow bit cake mix
1/2 cup vegetable oil
2 eggs
2 cups oreo cookies, chopped

method:
mix together cake mix, eggs and oil with wooden spoon.  fold in chopped oreos.  refrigerate for 1 hour.
preheat oven to 350F.
drop by rounded tablespoons on parchment lined cookie sheet.  bake for 9-11 minutes.  allow to cool on cookie sheet for 2 minutes before transferring to wire rack.

{yields approx 2 1/2 dozen}
