slow cooker chicken fajitas


i typically try to meal plan for the week every sunday, however, more often than not, i get a craving for something completely different.  luckily, i stock my fridge/pantry full of food that is easily adapted to accommodate my ever changing dinner preference.  
last nights dinner was supposed to be pesto gnocchi w/ shrimp and green beans. one of my favourites, don't get me wrong. however, last night, i was in the mood for football food.  scrap the pasta and traded it in for fajitas.  food that's perfect before the game and to snack on later during the game. #win  
typically i make my fajitas on the stove top, but i opted today to try a slow cooker version.  let's just say this may be how i go about them from here out.  super flavourful, no babysitting necessary.

slow cooker chicken fajitas


ingredients:
2 large (or 3 medium) boneless skinless chicken breasts, 
2 red bell peppers, julienned
1 yellow bell pepper, julienned
1 medium red onion, julienned
4 cloves garlic, minced
1/2 jalapeno, ribs and seeds removed (optional)
2 1/2 cups diced tomatoes
3 tablespoons water or stock.
2 1/2 teaspoons chili powder
2 teaspoons ground cumin
1 teaspoon paprika
3/4 teaspoon salt
3/4 teaspoon pepper
juice from 1 lime
1 1/2 tablespoons honey

to serve fajitas:
flour tortillas, warmed
cilantro
salsa
guacamole
pickled jalapeños
cojita cheese

method:
place half of the diced tomatoes in the bottom of the slow cooker.  top with water, half of the peppers and onions.  add in the garlic and jalapeño   
in small bowl, mix together all the spices and sprinkle over both sides of the chicken breasts.  place chicken on top of the peppers.  add in the remaining tomatoes, peppers and onions.
cook on low for 6-7 hours, until chicken is cooked through and shreds easily
remove chicken from slow cooker and shred.  remove the some of excess liquid from bottom of slow cooker.  add in fresh lime juice and honey and add back the chicken.  toss to mix well.
serve with warmed tortillas and fixings.
