scalloped sweet potatoes

easter this year i was tasked to bring scalloped potatoes. selfishly, i decided to take a new approach to traditional scalloped potatoes and prepare them with sweet potatoes, because lets face it, sweet potatoes reign supreme! 
add to it cream, gruyere cheese, thyme, garlic, nutmeg and you have a delicious side dish that warranted me going back for seconds.  i probably would have gone back for thirds if a lemon meringue pie wasn't staring me in the face.
oh how i enjoy big family holiday dinners. xo.


Scalloped Sweet Potatoes

ingredients:
2 1/4 cups heavy cream
2 tablespoons unsalted butter
2 cloves garlic, minced 
1 bay leaf
1 teaspoon fresh thyme
1/4 teaspoon nutmeg
1 teaspoon salt
1/4 teaspoon pepper
3lbs (5 medium) sweet potatoes, peeled & sliced approx 1/4-1/2-inch thick
1 cup gruyere cheese, grated

method:
preheat oven to 400F.  grease 9x13-inch baking dish.  set aside.
in small saucepan, heat cream, butter, garlic, bay leaf.  simmer.  stir in salt, pepper, nutmeg & thyme. 
layer potatoes in prepared dish.  remove bay leaf from sauce and pour sauce over potatoes.  
bake covered 35 minutes, remove foil and bake for another 15 or until tender.  add cheese and broil for 2-5 minutes or until golden.  let sit for 15 minutes before serving.
