Pacific Panini | Holy Grill

if you like smoked salmon and paninis, then this is right up your alley.  
thankfully the restaurant that happens to make this dish is in my beloved city, my alley per se.  but for those of you further away you'll benefit from this recipe thanks to my favourite Canadian eatery show, 'you gotta eat here!'

pacific panini

1 (11-inch) pita bread
2 tablespoon cream cheese
1 tablespoon capers
1/3 cup canned artichoke hearts
2 tablespoon red onion, thinly sliced
15 thin slices (3 oz) smoked salmon lox
1/3 cup raw spinach

preheat panini grill to 275F.
evenly spread cream cheese over surface of pita.
sprinkle layer of capers.
spread layer of artichokes and onion.  then, place salmon lox overtop.  top with spinach.
fold both ends of pita and roll until ingredients are sealed.
grill 4 minutes until toasted.
