homemade pickled radishes


if you pickle it, they will come.

i know this because i'm a sucker for anything pickled.  
jalapeños
carrots
beans
you name it, i'll eat it.


i decided to try my hand at pickling radishes for the first time.
earlier in the week i purchased a bag to accompany my new favourite lunch; hummus and avocado sandwiches.  
and, with a bounty leftover, i decided pickling them was the route to take.

family consensus;  nice route mom!

perfect to top off sandwiches, salads and yes, my beloved tacos.

Pickled Radishes

ingredients:
16 radishes, thinly sliced
2/3 cup white wine vinegar
1/2 cup sugar
2 teaspoons coarse salt

method:
in large bowl, combine vinegar, sugar and salt.  whisk till dissolved.  add in sliced radishes and allow to sit for 30 minutes.
radishes are best served within a few hours or can be refrigerated up to 1 day.
