Mixed Greens Salad w/ Roasted Rhubarb, Strawberries, Goat Cheese & Pistachios

i usually think of rhubarb as a dessert.
pie.
sinful.

i decided to approach my second 'rhubarb care package' in a healthier fashion, a salad.


a salad studded with strawberries, goat cheese & pistachios, because everyone knows a salad isn't a salad unless you have an ample supply of cheese and nuts.

this is most certainly rhubarb reimagined, at least for me.

Roasted Rhubarb, Strawberry & Goat Cheese Salad

Ingredients:
2 cups rhubarb, chopped
2 Tbsp sugar
8 cups mixed greens
2 cups strawberries, sliced
1/2 cup goat cheese, crumbled
1/4 cup pistachios, shelled

dressing
1/4 cup orange juice
1/4 cup olive oil
2 Tbsp white wine vinegar
1 Tbsp honey
1/2 tsp orange zest
salt & pepper to taste


Method:
preheat oven to 450F
toss rhubarb with sugar and place in baking dish.  roast for 5 minutes, remove from oven and allow to cool for 10 minutes in dish.
to make dressing, whisk together all ingredients, seasoning to taste with salt and pepper.
toss mixed greens with dressing (using as much or as little dressing as desired)
divide greens among four plates and top evenly with rhubarb, strawberries, goat cheese & pistachios.

serves 4.
