Lemon Buttercream Frosting
lemon is arguably my favourite dessert flavour. step aside chocolate and caramel, this is a job for citrus fruit.
it appears my son is following in his dear mom's footsteps, because for his 12th birthday (wait what? 12) he requested a lemon cake. done.
happy to oblige.
this year i went with a lemon buttercream frosting to top my store-bought boxed vanilla cake mix (skip judgement, boxed cake mixes are delicious)

Lemon Buttercream Frostingingredients:
1 cup unsalted butter, room temperature
4 1/2 cups confectioners' sugar
2 tablespoons milk
2 tablespoons lemon juice
2 teaspoons lemon zest
pinch of salt
in stand mixer beat butter on medium speed until creamy, approximately 2 minutes. turn mixer down to low and add in confectioners' sugar, milk, lemon juice and zest. slowly increase mixer speed and beat for 2 minutes. if frosting is too thick, thin it out with a tablespoon of milk.
cover and store in refrigerator.
