simple yogurt lemon loaf
yesterday felt like -500 outside, the extreme cold warning even prompted me to keep the kids home from school (and me avoiding going outside.) we stayed in bed late, never got changed out of our pjs, and played all day. it should also be noted i'm now on day four of not leaving the house, i'm not even sure i remember what fresh air smells like at this point, ha!
it might be winter outside, but inside it smells like spring. lemon loaf is my go to spring recipe. it's just such a heavenly scent, i love everything about it, and it was much needed for this frigid February.
so with the polar vortex happening outside, inside it smells like spring and cozied up by the fireplace it felt like it too.
here's hoping the next couple months hurry up and GTFO.

simple yogurt lemon loaf
ingredients:1 1/2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar
zest of 2 lemons
2 eggs
1/4 cup oil
1/4 cup unsweetened applesauce
1/2 cup vanilla yogurt
1/4 cup lemon yogurt
1/2 teaspoon vanilla extract
method:
preheat oven to 350F. spray a 9 x 5-inch loaf pan with non-stick spray. set aside
in large bowl combine flour, baking powder & salt. set aside.
in medium bowl combine sugar, zest, eggs, oil, applesauce, yogurts and vanilla extract. add wet mixture to dry and stir till just combined.
place batter in prepared pan and baked for 50-55 minutes or until toothpick inserted comes out clean.
