if you want your house to smell like fall, bake a pumpkin loaf. trust me.
who needs candles when you can have baked deliciousness instead.
this week i made a pumpkin loaf w/ a cream cheese glaze and i'm fairly certain i've locked my husband in for life with this one. first i asked him to try it, then he asked me for seconds.

1 teaspoon baking soda
2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon ground cloves
3/4 teaspoon salt
2 large eggs
1 cup sugar
1/2 cup packed brown sugar
1 1/2 cup canned pumpkin puree
1/2 cup butter, melted
1/4 cup almond milk
1/2 teaspoon vanilla extract
glaze:
1 cup confectioners sugar
3 tablespoons, light cream cheese
2 tablespoons almond milk
1/4 teaspoon vanilla
method:
preheat oven to 350F. spray 9x5 inch baking dish with non-stick cooking spray. set aside.
in large bowl, combine flour, baking soda, cinnamon, nutmeg, cloves and salt.
in separate bowl, combine eggs, sugars, pumpkin puree, butter, milk and vanilla extract.
add wet to dry ingredients.
fold in together, don't overmix. pour into prepared pan.
bake for 65-70 minutes or until toothpick comes out clean. tent with tinfoil after 30 minutes so it doesn't overbrown during baking.
allow to cool for 15 minutes, before turning out onto baking rack to finish cooling.
to prepare glaze: mix all ingredients into small bowl. pour over cooled loaf. allow to set before slicing.
enjoy. xo.
