classic coleslaw
if there was one side dish that sums up summer, it has to be coleslaw. it's perfect for a picnic, backyard BBQ & a neighbour block party. of course coleslaw tastes even better when paired w/ my root beer pulled pork. i'm just saying.
in any case this classic side dish is a crowd pleaser and a welcome accompaniment to any dinner, lunch, or social function.
it also means i'm holding on to summer with both hands!
classic coleslaw
ingredients:1 (454g) pkg bagged coleslaw
1/2 head red cabbage, thinly sliced
1 large carrot, grated
1 Granny Smith apple, sliced into matchsticks
1 cup mayo
1 tablespoon dijon mustard
drizzle olive oil
1/2 lemon juiced
1 tablespoon apple cider vinegar
1 tablespoon sugar
sea salt & pepper to taste
pinch celery salt
method:
in large bowl mix together bagged coleslaw, cabbage, and grated carrot. set aside.
in a small bowl whisk together mayo, mustard, olive oil, lemon juice, vinegar, sugar. season to taste with sea salt, fresh cracked pepper and celery salt.
add dressing to coleslaw, mixing well. wrap with plastic wrap and refrigerate for 2 hours. just before serving add in the apple, toss once more.
