oatmeal raisin & chocolate chip cookie bars

today i found a lone, leftover chocolate bunny hiding in the pantry. which means this is officially the longest span of time a chocolate bunny has been in my presence and hasn't been eaten (probably because i didn't know he was there...)

initially my plan was to make oatmeal raisin cookies, one of my very favourite cookies.  however, the beautiful weather outside meant that the appeal of making batch after batch of cookies was less than ideal.  so instead i opted for the lazy girls approach and made COOKIE BARS!  so genius, so easy, oh and i added some chocolate for good measure.

who says lazy is bad?!?

oatmeal raisin & chocolate chip cookie bars

ingredients:

1 cup butter, softened

1 cup light brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla

1/2 teaspoons salt

1 teaspoon baking soda

1 teaspoon baking powder

1 1/2 cups all-purpose flour

2 cups rolled oats

1 cup milk chocolate, chopped 

1 cup raisins

method:

preheat oven to 350 degrees F.  using non-stick spray, spray a 9 x 13 pan and set aside.

in a bowl of an electric mixer beat together the butter, brown sugar, and granulated sugar until smooth and light.

add the eggs one at a time, mixing after each one.  add in vanilla.

in a separate bowl combine the flour, oats, salt, baking soda, baking powder, raisins, and 1/2 cup chocolate chips.

add the dry mixture to the wet mixture and mix until combined.

press half of the cookie dough into the bottom of the prepared pan.  sprinkle remaining 1/2 cup of chocolate over the top.

press the remaining cookie dough on top of the chocolate.  bake for 25 to 30 minutes or until golden brown.  allow to cool completely before cutting into squares or bars.
