cilantro & honey-lime salmon w/ strawberry-jalapeno salsa
yesterday in the midst of a huge thunderstorm i sent my favourite {albeit only} husband out to bbq salmon for sunday super. no amount of rain, lightening or hail was going to stop him, or dinner from being served. after all it is still my birthday week/month.
dinner consisted of fresh salmon marinated in a cilantro & honey-lime bath of deliciousness. topped with a strawberry-jalapeño salsa.
all the pretty colors and all the great flavours for the sunday win.
cilantro & honey-lime salmon w/ strawberry-jalapeno salsa
ingredients:1 lb salmon filet
1/4 cup olive oil
3 tablespoons lime juice
1 1/2 teaspoons honey
1/4 cup cilantro, roughly chopped
2 cloves garlic, minced
salt & pepper to taste
strawberry-jalapeno salsa
1lb strawberries, chopped
1 jalapeno, seeded and ribs removed, finely chopped
1/2 cup cilantro
1/3 cup red onion, diced
juice of lime
salt & pepper to taste
method:
in small bowl, whisk together olive oil, lime juice, honey, cilantro, garlic, salt and pepper. place fish in large resealable plastic bag and add the olive oil mixture. seal and turn to coat. refrigerate for at least 30 minutes.
meanwhile to make the salsa: combine all the ingredients and mix well.
preheat grill to high heat. turn down to medium and place salmon skin side down on the grill. grill for 6 to 8 minutes to medium doneness, turn and grill on other side to internal temperature 145F. top fish with salsa and serve.
