Banana-Zucchini Bread
zucchini bread is one of my favourites.
so obviously a mash-up of both is going to be post worthy.
this long weekend we had plans, big plans.
lay sod in our front yard, partake in a soccer rematch with friends, have a BBQ.
mother nature decided against all of it however, and made it rain, {and not in the good way, like 'make it rain $$, just rain} #soaked

outside was out of the question, so instead i tuned focus to make our new home, homier. i created a gallery wall in our foyer and baked bread. both of which turned out pretty stellar if i do say so myself.

Banana-Zucchini Bread
ingredients:
2 cups all-purpose flour
1/2 cup sugar
1/3 cup brown sugar, packed
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon cinnamon
1/4 teaspoon salt
2 eggs
1/3 cup butter, melted & cooled
1/4 vanilla yogurt
3 ripe bananas, mashed
1 cup zucchini, grated & squeezed dry
1 1/2 teaspoons vanilla
method:
preheat oven to 350F. grease 9x5-inch baking pan and set aside.
in large bowl combine the first 7 ingredients and whisk.
in medium stir together the remaining ingredients until blended. add to dry ingredients, with a wooden spoon mix just until batter comes together. do not overmix.
pour batter into prepared pan and bake for 55-60 minutes or until toothpick inserted in centre comes out clean.
