green bean & blueberry salad w/ organic grains & almonds


i eat with my eyes & my stomach.
maybe that's why i'm always hungry.
i'm feeding two instead of one.


nevertheless, i take pride in preparing dishes that not only taste great but that also look pretty.

and this dish fits the bill.


also it's healthy, organic, and just what i need to follow up a few days of over-indulging.




green bean & blueberry salad w/ organic grains & almonds

ingredients:
12oz (350g) fresh green beans, ends trimmed
1/2 cup blueberries
1/3 cup cooked organic grains (i used a blend of quinoa, millet, amaranth) 
1/4 cup sliced almonds
1/4 cup olive oil
1 tablespoon whole grain dijon mustard
1 tablespoon organic honey
1/4 tsp thyme
sea salt to taste


method:
bring large pot of water to a boil.  add beans and cook till bright green, 2-3 minutes.
strain blanched beans and transfer to an ice bath to cool completely, 5 minutes.
drain again.  set aside.
in small bowl whisk together oil, mustard, honey, thyme and salt.
in large bowl add quinoa to cooled beans and drizzle with vinaigrette, tossing to coat.
add in blueberries and almonds.
serve.
