Parmesan & Garlic Roasted Cauliflower


simple side dishes have a permanent residence in our home.  nothing fussy.  just easy, flavourful, and healthy.

cauliflower is one of those sides.

great roasted, in soups, and even as substitute for mashed potatoes.
they're pretty much great all around.  go ahead i dare you not to like them.




Roasted Cauliflower w/ Parmesan & Garlic

Ingredients:
1 head of cauliflower, cut into florets
2 Tbsp olive oil
2 cloves garlic, minced
2 Tbsp Parmesan cheese
1 Tbsp fresh parsley, chopped fine
sea salt & pepper 

Method:
Preheat oven to 425F.
Spread cauliflower florets onto baking sheet sprayed with non-stick spray.  Drizzle with olive oil tossing to coat.
Bake for 25-30 minutes, until fork tender, turning every 10 minutes. Add garlic during last 5 minutes of cooking time.
Remove from oven and place into bowl.  Toss with cheese, parsley, and salt and pepper to taste.

Serves 4

  1. cauliflower is my fav veggie. yum! and adding parm to it, just blows this out of the water for me. double yum!
