farmers' markets in & around calgary


if you don't like spending your weekends perusing farmers markets then i just don't understand you.  
for me, that describes my perfect saturday morning; coffee in one hand, reusable shopping bag in the other and plenty of vendors offering farm fresh food.

eating locally is eating seasonally, it's also healthier, better for the environment and supports farmers and producers in our own community.

mix & match cereal treats


with school scheduled to start one week today {insert huge smile here} thoughts have turned from lazy beach time to stockpiling school lunchbox snacks so that my favourite little people have something to remember me by.

cereal treats are the one thing every kid grows up on, tried and true.


and this simple design-your-own bar recipe, you now have unlimited flavour combinations, so that no one tires of the same old snack, in fact you can now make a new one for every week of the school year.

mix & match cereal treats

1. choose your cereal
use 7 cups total {pick 1 or 2 types}
  • crispy rice cereal {regular or chocolate}
  • cornflakes
  • corn or rice squares
  • toasted oat cereal {regular or chocolate}
  • graham cereal 
  • chocolate puffs
2. make the base
line a 9-inch square baking dish with nonstick foil.  melt 6 tablespoons unsalted butter or coconut oil in a large pot over medium heat.  add one 10-ounce bag mini or regular marshmallows and stir until melted, then site in 1 teaspoon vanilla.  stir in 1/2 cup nut butter, if desired.  move from the heat and stir in the cereal

3. add in mix-ins
stir in up to 1 1/2 cups total {pick up to 3 types}
  • granola
  • nuts, roughly chopped
  • freeze-dried fruit, chopped if large
  • dried fruit, chopped if large
  • yogurt-covered raisins
  • sweetened shredded coconut, toasted
  • mini marshmallows
  • chocolate chips
  • white chocolate chips
  • peanut butter chips
  • butterscotch chips
  • toffee bits
  • candy-coated chocolates
  • sprinkles {up to 1/4 cup}
4. form the bars
press the cereal mixture into the prepared pan using a rubber spatula or lightly buttered hands.
let cool, then lift out of the pan using the foil and slice.

mix & match sangria


summer = sangria.
and the last weekend in august = girls summer "glamping" {aka fancy camping} trip with my best girl.

so in honour of both of those things, today i'm sharing with you an easy formula to create a custom batch of sangria.
the summertime anthem for any girls getaway.
  
boozy, girly, fruity, & perfect for a weekend away from boys.

Mix & Match Sangria


1. pick your wine
pour one 750-ml bottle into a large pitcher or punch bowl
  • dry white wine
  • dry red wine
  • dry rose
2. add liquor or liqueur
stir in 2 tablespoons superfine or light brown sugar, then add 1/3 cup of one of the following:
  • orange liqueur {such as grand mariner}
  • berry liqueur {such as chambord}
  • brandy
  • white rum
  • elderflower liqueur {such as st-germain}
  • ginger liqueur {such as domain de canton}
3. choose your fruit
add up to 2 1/2 cups chopped or sliced fruit {use at least 1/2 cup citrus}.
refrigerate at least 3 hours or up to 1 ay.
  • citrus
  • apples 
  • peaches or nectarines
  • plums
  • mangoes
  • grapes
  • pineapple raspberries
  • blueberries
  • cherries
  • strawberries
  • blackberries
4. top it off
just before serving, stir in 1 cup of any of the following:
  • seltzer
  • lemon-lime soda
  • sparkling apple cider
  • purple or white grape juice
  • pomegranate juice
  • passion fruit juice

try these combinations, pictured above from left to right.

rose + berry liqueur + lime + peaches + blackberries + lemon-lime soda
white wine + elderflower liqueur + grapefruit + grapes + raspberries + seltzer
red wine + ginger liqueur + lemon + pineapple + cherries + grape juice

Lemon Poppyseed Oatmeal


i pretty much eat oatmeal everyday.  
i love it.
warm or cold.
it's the fuel i need post gym and it never lets me down.

my secret to creamy oatmeal? 
egg whites.  seriously.
extra protein & extra creamy is how i choose to live.
hungry jen is never a good thing.  

this morning i decided to create a lemon poppyseed version because, well i'm a lemon fanatic, and although i've mastered the cake, brownies, bread, muffins, parfaits, and pancakes to name i few, i've neglected to make an oatmeal. 
until now... 




Lemon Poppyseed Protein Oatmeal


ingredients:
1 cup quaker oats
2 cups unsweetened vanilla almond milk
2/3 cups egg whites
1 lemon, juiced
2 tablespoons brown sugar
2 teaspoons poppyseeds
1 teaspoon lemon zest

almonds and lemon zest for serving



method:
cook oats as usual on stovetop as per package instructions.  after most of the milk has been absorbed, pour in the egg whites and whip vigorously with a whisk until mixture is well blended.  increase heat to medium and continue to cook till all of the milk has been absorbed and the egg whites have caused the oats to puff and appear creamy.  cover and remove from heat.  let oats sit for 5 minutes.   stir in brown sugar, lemon juice, poppyseeds and lemon zest.
divide into two bowls.
top almonds and lemon zest if desired.

serves 2

Bar C


dinner and globalfest w/ C & JM.  that was the plan.  mother nature however, decided to intervene with a windstorm postponing globalfest and ruining what i was hoping would be a patio dinner.   #ugh.

being that mr. handsome and i previously lined up a sleepover for the littles, we still managed to make use of it, even if it meant dining indoors and no fireworks.

because it was tuesday, i immediately thought of Bar C as the venue of choice.  located at 340 17th ave sw, Bar C has buck-a-shuck oysters and half price wine {by the ml, which proves to be dangerous, so my head tells me this morning anyway}  
it's double-date night friendly with shareable tapas, charcuterie, oh and did i mention oysters and wine by the ml?


here is a look into our delicious dinner.  i think a regular tuesday night reservation is in order.




oysters | west coast w/ lemon, horseradish, green onion



beet root & feta salad |  watercress, pistachio dressing


tomato & burrata salad |  local cocktail tomatoes, white balsamic, basil, sea salt, crostini


mushroom & sweet pea risotto |  leek, parmesan, truffle oil


linguine |  artichoke, white wine, olive oil, pecorino romano


mussels & frites |  tomatoes, basil, white wine, smoked paprika aioli


charcuterie & cheese
smoked bison
parma prosciutto
served w/ house made picked vegetables, grainy mustard crostini

smoked gouda
brie
served w/ fig jam, baguette, honey & fresh fruit

then to national 17th we went!

Weekend Road Trip | Fernie, BC


last weekend we decided to jump in the car headed for a quick weekend road trip to fernie, bc.   
true to form, i ensured we looked as
 much like tourists as possible by stopping for as many photo ops as possible.
